Clotted cream – rich, unctuous and wickedly good, clotted cream is the pride of the West Country.
How is clotted cream made? Traditionally, milk was heated gently heated, the cream rose to the top and was taken off with a paddle; the skimmed milk left behind was used to feed the pigs and turkeys. Today, a separator is used, the cream is pasteurised, then baked, so that it forms a crust, then chilled until it’s set.
In Cornwall, the jam goes on the scone first, but, in Devon, it’s cream!
Here is how Nick Rodda, the fifth generation of makers from Redruth describes his cream –There’s the ‘little bit of texture to the crust, the initial silky smooth mouth-feel, the cool, fine, slightly nutty flavour’ that comes through as it ‘delicately coats the roof of your mouth.’ Nick is the current managing director of the business started by his great-great grandmother, Eliza Jane, in 1890.

This is the story of their beginning:
On a wet August day in 1981, the Chadwick family went into a little shop in Adelaide Street, Penzance, called General Clothing Stores. They only went in to buy some waterproof coats but ended up buying the shop as well!
The shop sold traditional workwear, like fishermen’s smocks, Guernsey pullovers and striped tops, and within a few months they had moved down from the Midlands and were living in St Ives. Customers in those days were the sailors, farmers and fishermen of the area, and quite a few of the St Ives artists came in as well.
The three Chadwick brothers worked in the family shop and when their dad, Don, passed away in 2001, the brothers decided to create a clothing brand inspired by all the things they love about Cornwall…and Seasalt was born.
They are now very proud to be one of Cornwall’s biggest employers, and they were the first company in Great Britain to be accredited with Soil Association approval, their sustainable credentials remain important to them.
